Who doesn’t love banana bread? So moist, sweet and satisfying, it makes the perfect treat. But sometimes you don’t have enough bananas on-hand, or you’re short on time. We get it, the struggle is real. Which is why today are going to share a real gem of a recipe with you!
This banana bread only requires one banana, which makes it much quicker than traditional recipes. It also yields just six servings, which is helpful if you’re like us and cannot be trusted around baking ;)
One & Done Banana Bread
Serves 6
Ingredients
- 1 ripe banana
- 1 egg
- 1 teaspoon of vanilla extract
- 3 tablespoons of olive oil
- 1/2 cup + 1 tablespoon of all-purpose flour
- 1/2 cup of brown sugar
- 1/4 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1/2 cup of chopped walnuts
Instructions
- Preheat the oven to 325℉
- In a medium sized mixing bow, mash the banana. Then stir in the egg, vanilla and oil until all combined. Next, add the flour, sugar, baking soda and salt all at once. Fold until combined and then stir in the walnuts
- Spoon batter into greased mini loaf pans or a muffin tin
- If using mini loaf pans, bake for 18-20 minutes. If using a muffin tin, bake for 14-15 minutes
- Remove from oven and let sit until cool
If you want to make this recipe a little healthier, feel free to sub in whole wheat for all-purpose flour and replace the olive oil with equal parts applesauce. If you want it sweeter, replace the walnuts with chocolate chips. Still craving more? Serve the banana bread warm with a scoop of vanilla ice cream on top. Mmmm, so good!
